Mokuya Foods Co., Ltd. has been loved by locals for so long that when people think of udon, soba, and yakisoba noodles, they think of “Mokuya.”

It opened in 1946 (Showa 21) and this year marks its 78th anniversary.

In 2004, the company opened a directly managed store, “Mendokoro Mokuya,” across from the head office factory.

The udon served at our directly managed stores is made differently from the udon you can buy at supermarkets, and is made using the same recipe as when we first opened our store.

Because customers can enjoy the original flavor of the historic “Mokuya Udon” at a price that can only be found at a directly managed store, the store is crowded with so many fans that there are long lines every day.

Mokuya Foods’ strengths extend beyond udon noodles.

Fresh pasta accounts for 80% of their production and is sold at major pasta stores as well as at Kaldi Coffee Farm, where it is highly acclaimed for being “chewy and delicious.”

History of Mokuya Foods

Mokuya Foods Co., Ltd. was founded in 1946 (Showa 21).

The company’s founder, Mr. Kinsaku Mokuya, had experience working for a rice wholesaler and was involved in food distribution as part of the Food Agency during the war.

After the war, the company established “Mokuya Shoten” in Wakabayashi, Hamamatsu City, and began producing udon, soba, Chinese noodles, and other products as well as operating as a rice wholesaler.

In 1971, the head office and factory were relocated to a new building in Irino-cho and operations began to expand.

In 1995, Mr. Koichi Mokuya became the second president and the company name was changed to “Mokuya Foods Co., Ltd.”

Since 2007, the third generation, Mr. Shoichi Mokuya, has been the company’s representative.

Originally, Mokuya Foods produced many related products in addition to noodles, but when the third generation took over, the company changed its strategy to focus on “products that are unique to Mokuya Foods.”

In addition to udon, soba, and Chinese noodles, the company’s main product, fresh pasta, is sold nationwide and accounts for 80% of the products that Mokuya Foods produces.

When locals hear the name Mokuya Foods, they think of “udon” or “soba,” but I was surprised to learn that the product they produce the most is actually “fresh pasta.”

Their commitment to fresh pasta

Mokuya Foods began producing fresh pasta about 35 years ago.

At the time, there were few companies producing fresh pasta, so product development began at the suggestion of Mr. Koichi Mokuya (who was Managing Director at the time of development and later became the second president), who said, “I want to try something new.”

After a year of development, “Fresh Pasta Spaghetti” and “Fresh Pasta Fettuccine” were born.

The flour used to make the pasta is “durum wheat semolina,” which is made by coarsely grinding durum wheat (semolina), which gives the pasta a unique chewy texture.

In addition, the pressure applied when extruding pasta through a noodle making machine causes the starch, the main ingredient in the noodles, to gelatinize through heat, resulting in pasta with a chewy texture.

The flour blend used is original to Mokuya Foods and is one of a kind, not available anywhere else.

Of course, the pasta making machine is also custom made and exclusive to Mokuya Foods.

This is a masterpiece that Mokuya Foods is proud of, developed with the desire to allow people to enjoy delicious fresh pasta like what they would get in a restaurant, at their own table.

In 2004, Mokuya Foods opened its own store, Mendokoro Mokuya, across from its head office factory.

The reason behind opening the directly managed store was that they wanted children to know how delicious udon is.

“At the time, juice from vending machines cost 100 yen, so we set the price so that you could get Kake Udon for the same amount of 100 yen,” says President Mr. Shoichi Mokuya.

Mendokoro Mokuya was started with the aim of preserving udon culture for future generations, and has been a huge success since its opening, with queues forming every day.

Even now, 20 years later, it remains so popular that customers line up before the store even opens.

The most attractive feature is the reasonable prices that can only be found at a direct store!

A regular serving of Kake Udon noodles can be had for as little as 230 yen.

The udon noodles served at our directly managed stores are different from the type of noodles sold wholesale to retail stores, and are made using a recipe that has been in place since the company first opened.

The udon noodles, which can only be eaten at Mendokoro Mokuya, are served with an original soup blend made by the restaurant itself.

This restaurant is designed with the utmost consideration for its customers.

There is a wide selection of side dishes available, including small dishes and fried foods, so you can choose what you like.

This system allows customers to freely combine the foods they want to eat, making it a great option for them.

3rd : Raw soy sauce udon with soft-boiled egg (regular 330 yen, large 380 yen)

2nd: Lake Hamana nori udon with soft-boiled egg (regular 380 yen, medium 430 yen)

The original sauce, available only at directly managed stores, is light and goes perfectly with Lake Hamana seaweed!

 

1st: Kake Udon (regular 230 yen, large 280 yen)

They use udon noodles made using the same method that they used when they first opened.

The noodles are freshly made and boiled in the factory, so they’re really delicious!

This is our most popular item, with a chewy texture and a refreshing taste.
